Red Thai Curry
Basic recipe for Red Thai Curry:
- Add oil to pan, heat up
- Add chicken, cut into parts
- Add carrot and Potato, cut into pieces
- Turn heat on low
Then add:
- 1 Tbsp. Curry Powder
- 1 Tbsp. Red Thai Curry Paste
- 1 Tbsp. Garlic Powder
- 1 Tbsp. Lemon juice
Stir this together with the oil in the pan. Then add:
- 1/2 Tbsp. Red Chili Powder
- 2 cups of Boiling Water
- 1 Tsp. Salt
- 1 Tbsp. Soya Sauce
- 1 Tbsp. Sugar
- 1/2 Tbsp. Black Pepper
- 1 Tbsp. Coconut Milk
- 1 Tbsp. minced fresh Lemongrass
Stir together then add:
- Chopped Chilies
- 3 Tbsp. Fresh Milk
- 1 Tbsp. Spring Onion
Let it stand for a few minutes, then ready to serve!
I should mention that I though that this recipe had more Vietnamese influence than Thai, so it is quite different to the Red Curries I had in Thailand. I will try to get that recipe as well.
