Red Thai Curry

Basic recipe for Red Thai Curry:
  • Add oil to pan, heat up
  • Add chicken, cut into parts
  • Add carrot and Potato, cut into pieces
  • Turn heat on low

Then add:

  • 1 Tbsp. Curry Powder
  • 1 Tbsp. Red Thai Curry Paste
  • 1 Tbsp. Garlic Powder
  • 1 Tbsp. Lemon juice

Stir this together with the oil in the pan. Then add:

  • 1/2 Tbsp. Red Chili Powder
  • 2 cups of Boiling Water
  • 1 Tsp. Salt
  • 1 Tbsp. Soya Sauce
  • 1 Tbsp. Sugar
  • 1/2 Tbsp. Black Pepper
  • 1 Tbsp. Coconut Milk
  • 1 Tbsp. minced fresh Lemongrass

Stir together then add:

  • Chopped Chilies
  • 3 Tbsp. Fresh Milk
  • 1 Tbsp. Spring Onion

Let it stand for a few minutes, then ready to serve!

I should mention that I though that this recipe had more Vietnamese influence than Thai, so it is quite different to the Red Curries I had in Thailand. I will try to get that recipe as well.
